  • 2 - big Brinjals
  • 1 - large onion, finely chopped
  • 4 - dry red chillies
  • 4 - green chillies
  • Yogurt
  • Coriander leaves
  • Curry leaves
  • Salt to taste
  • Jeera
  • 1 tsp - mustard seeds
  • 4 tsps - oil

How to Make Vaangya Cha Bhareet

  • Cut the brinjals into regular-sized pieces.
  • Heat 2 tsps of oil in a pan, fry the brinjal pieces till cooked. Make sure that they don't burn. Keep aside.
  • Take sufficient fresh yogurt in a bowl.
  • Add the cooked brinjals, finely chopped onions and green chillies.
  • Now heat another 2 tsps of oil in a pan, add mustard seeds. When they splutter, add jeera, dry red chillies and curry leaves.
  • Add this seasoning to the brinjals and garnish with fresh coriander leaves.
  • Add salt and mix well.
