Ingredients

  • 2 - big Brinjals
  • 1 - large onion, finely chopped
  • 4 - dry Red Chillies
  • 4 - Green chillies
  • Yogurt
  • Coriander leaves
  • Curry leaves
  • Salt to taste
  • Jeera
  • 1 tsp - Mustard Seeds
  • 4 tsps - oil
  • How to Make Vaangya Cha Bhareet:

    1. Cut the brinjals into regular-sized pieces.
    2. Heat 2 tsps of oil in a pan, fry the brinjal pieces till cooked. Make sure that they don't burn. Keep aside.
    3. Take sufficient fresh yogurt in a bowl.
    4. Add the cooked brinjals, finely chopped onions and green chillies.
    5. Now heat another 2 tsps of oil in a pan, add mustard seeds. When they splutter, add jeera, dry red chillies and curry leaves.
    6. Add this seasoning to the brinjals and garnish with fresh coriander leaves.
    7. Add salt and mix well.
