Ingredients

  • 400g - val beans (anapa ginjalu)
  • 1 medium onion, chopped fine
  • 4 green chillies, chopped fine (reduce the no. for children)
  • 1 red chilli, broken into pieces
  • 1/4 tsp - cumin
  • 6 peeled and crushed garlic cloves
  • 8 curry leaves
  • 2 tsp - chopped, coriander leaves
  • 1.5 tbsp - desiccated coconut powder (fresh if available)
  • Salt
  • 1 tbsp - oil
  • 1/4 tsp - mustard seeds
  • 1 tsp - urad dal (split)

How to Make Val beans sundal (anapa ginjala guggillu)

  • Boil the beans with salt till tender, drain and keep aside,
  • Heat oil, add mustard seeds, urad dal, cumin, garlic, curry leaves and red chilli.
  • Fry till the seeds splutter and dal changes colour to light brown.
  • Add onions, green chillies and fry till onion becomes soft.
  • Add the boiled beans, mix well, cover and cook for 3-4 minutes.
  • Stir a couple of times.
  • Sprinkle coriander leaves and desiccated coconut powder, mix well before removing from fire.
  • Serve as tea time snack.
