  • 1 cup - all-purpose flour
  • 1/2 tsp - baking soda
  • 2 tsp - vanilla essence
  • 1 tsp - all spice (or nutmeg, cinnamon, dry Ginger and Star anise powder)
  • 1/2 tsp - Orange zest
  • 1/2 tsp - salt
  • 2 tbsp - vegetable oil
  • 1/4 cup - granulated Sugar
  • 1 - large Egg
  • 2 tbsp - unsalted Butter softened
  • 4 tbsp - confectioners Sugar to sprinkle on top
  • 4 tbsp - jam (raspberry or strawberry)
  • How to Make Vanilla Tea Cupcakes:

    1. Preheat oven to 350 degrees F.
    2. In a bowl, whisk together the flour, the baking soda, the spices, and a pinch of salt.
    3. In another bowl, cream together the butter and the granulated sugar.
    4. Beat in the egg, till light and fluffy.
    5. Add the oil and whisk together.
    6. Slowly combine the liquid mixture to the dry ingredients, beating well after each addition.
    7. Finally, add the vanilla essence and orange zest to the batter.
    8. Divide the batter among 12 paper-lined mini-muffin tins and bake the cupcakes in the middle of an oven for 15-20 minutes.
    9. Turn the cupcakes out onto a wire rack and let them cool completely.
    10. Whip up the jam mixture with 4 drops of water.
    11. Drop a tiny spoonful on the top of each cupcake.
    12. Dust with confectioner's sugar and serve.
