Ingredients

  • 10 - brinjals
  • 3 - onions
  • 5 tbsp - oil
  • 1/2 tbsp - cumin
  • 1/2 tbsp - mustard seeds
  • 1/2 tbsp - urad dal (white)
  • 1 sprig - curry leaves
  • 1 tbsp - turmeric powder
  • Salt to taste
  • 1 tsp - chilli powder
  • 1.5 cups - milk

How to Make Vankay paalu koora

  • Add oil to pan and wait till the oil gets heated.
  • Add mustard seeds, urad dal, cumin and curry leaves.
  • Add finely chopped brinjal pieces and let it cook until the brinjals soften.
  • Add salt, chilli powder and turmeric powder to the mixture and stir well.
  • Wait until the mixture cooks well, add milk to the mixture and let it cook until the oil separates.
  • Serve with hot rice and ghee.
