Ingredients

  • 6 - Small Brinjals
  • 4 - Red chillies
  • 1 tbsp - Channa Dal
  • 1 tbsp - Urad Dal
  • 1 tbsp - Jeera seeds
  • 1 tbsp - Dhania seeds
  • 1/2 Phoeniculum seeds (Menthulu)
  • Salt to taste
  • Oil
  • 20 g - Tamarind if not amchoor powder

How to Make Vankaya Menthi Kaaram Koora

  • Fry red chillies, channa dal, urad dal, jeera, dhania, menthulu seeds in a small amount of oil and keep aside.
  • Grind all the above things with salt.
  • Cut the brinjals in four, leaving the stems attached, to prepare it for stuffing.
  • Stuff the above paste into all the slits of the brinjals.
  • Heat the oil in a deep fry pan, put the stuffed brinjal in oil and fry well.
  • Soak tamarind in water for few minutes and squeeze the juice into the pan while cooking.
  • Serve with rice or chapatti.
