  • 6 - Small Brinjals
  • 4 - Red Chillies
  • 1 tbsp - Channa Dal
  • 1 tbsp - Urad Dal
  • 1 tbsp - Jeera seeds
  • 1 tbsp - Dhania seeds
  • 1/2 Phoeniculum seeds (Menthulu)
  • Salt to taste
  • Oil
  • 20 g - Tamarind if not Amchoor powder
  • How to Make Vankaya Menthi Kaaram Koora:

    1. Fry red chillies, channa dal, urad dal, jeera, dhania, menthulu seeds in a small amount of oil and keep aside.
    2. Grind all the above things with salt.
    3. Cut the brinjals in four, leaving the stems attached, to prepare it for stuffing.
    4. Stuff the above paste into all the slits of the brinjals.
    5. Heat the oil in a deep fry pan, put the stuffed brinjal in oil and fry well.
    6. Soak tamarind in water for few minutes and squeeze the juice into the pan while cooking.
    7. Serve with rice or chapatti.
