Ingredients

  • 1 - Lemon-sized piece of tamarind
  • 1/2 tsp. - Fenugreek seeds
  • 1 sprig - Curry leaves
  • 1 tsp. - Sambhar powder
  • Mixed vegetables like red pumpkin, drumsticks, ladyfinger or eggplant
  • 2 tsps - Sesame oil
  • 1/2 tsp - Mustard seeds
  • 3 - Dry red chillies
  • 1 small piece - Asafoetida
  • 1/2 tsp - Turmeric powder
  • 1 tsp - Jaggery

How to Make Vatta kolambhu (tamarind curry)

  • Soak tamarind in some water.
  • After 10 minutes, extract the juice and keep aside.
  • Heat oil in a kadai. Add mustard seeds and let it splutter.
  • Add curry leaves, asafoetida and fenugreek seeds.
  • Lower flame, add sambhar powder and turmeric powder.
  • Now add the tamarind juice.
  • Allow the water to boil for 10 minutes before you add the chopped vegetables.
  • Now boil until all the vegetables are cooked.
  • In the end, add jaggery.
  • Stir well.
  • Your vatta kolambhu is ready.
