How to Make Veg Spicy Fried Rice

  • Chop shallots along with leaves, celery, leeks, carrots, bamboo shoots and capsicums into thin long strips. Slice the onions.
  • Heat a little oil, saute the onions and shallots.
  • Add leeks, celery and saute.
  • Add vegetables and shallow fry a little. Add salt, soya and chilli sauce.
  • Fry well. Keep aside for 10 minutes.
  • In the meantime, heat oil in another pan and fry washed rice for 5 mins till all the grains are covered with oil.
  • Transfer rice to another container and add 1.5 cups of water. Transfer this to a pressure cooker (for 6.5, 7.5, 10 and 12 litres pressure cookers use 2 cups of water) and cook the rice for 8 mins.
  • Add fried vegetables and tomato sauce to the cooked rice and mix well.
  • Garnish with a sprinkling of pepper (black) and a little vinegar. Best eaten with soups.
  • Serve hot.
