Ingredients

  • 2 cups - all-purpose flour
  • 3/4 cup - Sugar
  • 1 tbsp - packed Brown sugar
  • 4 tbsp - oil
  • 1 tbsp - Flax seed meal
  • 1 - ripe Banana
  • 20 - Almond pieces
  • 4 tbsp - vegetable shortenings
  • 1 tsp - baking soda
  • How to Make Vegan Banana Almond Cookies:

    1. Mix flax seed meal with 3 tbsp lukewarm water to form a thick paste
    2. Take a large bowl, add the flour, sugar, brown sugar, almond pieces, vegetable shortening, baking soda, thick flax seed paste and oil, mix everything well and add the ground banana paste, knead.
    3. Preheat the oven at 300 F for 5 mins
    4. Arrange a parchment sheet over a baking tray. Grease palms, take a small ball from the dough and flatten them
    5. Use spoons to flatten dough as cookies, leave some space between the cookies
    6. Bake them for 20-25 minutes in the middle rack
    7. Store them in an air tightened container
