Ingredients

  • 2 cups - all-purpose flour
  • 3/4 cup - Sugar
  • 1 tbsp - packed Brown sugar
  • 4 tbsp - oil
  • 1 tbsp - Flax seed meal
  • 1 - ripe Banana
  • 20 - Almond pieces
  • 4 tbsp - vegetable shortenings
  • 1 tsp - baking soda

How to Make Vegan Banana Almond Cookies

  • Mix flax seed meal with 3 tbsp lukewarm water to form a thick paste
  • Take a large bowl, add the flour, sugar, brown sugar, almond pieces, vegetable shortening, baking soda, thick flax seed paste and oil, mix everything well and add the ground banana paste, knead.
  • Preheat the oven at 300 F for 5 mins
  • Arrange a parchment sheet over a baking tray. Grease palms, take a small ball from the dough and flatten them
  • Use spoons to flatten dough as cookies, leave some space between the cookies
  • Bake them for 20-25 minutes in the middle rack
  • Store them in an air tightened container
