Ingredients

  • 1 cup - Wheat flour
  • 1.5 cups - all-purpose flour
  • 1/2 cup - chocolate chips
  • 1/2 cup - Sugar
  • 1 cup - oil
  • 2 tbsp - flaxseed meal
  • 1/2 cup - Apple sauce
  • 1/2 cup - finely grated Cucumber
  • 1/2 cup - walnuts, chopped roughly
  • 1/2 tsp - baking powder
  • 1 tsp - baking soda
  • A pinch - salt

How to Make

  • Preheat the oven to 350 degree F
  • Grease well a loaf pan and keep aside.
  • Sieve together the flours, baking powder, baking soda and keep aside.
  • Mix the flaxseed meal with 6 tbsp of lukewarm water and keep aside.
  • Whisk the oil, apple sauce, salt and sugar together till the sugar dissolves, now add in the flax seed meal mixture, grated cucumber and mix for few mins.
  • Melt the chocolate chips with two tbsp of water in microwave oven for a minute, mix it well and add it to the oil mixture.
  • Make a well in a middle of the dry ingredients, stir in the wet ingredients and mix with a spatula, don't over mix the batter.
  • Fold in the chopped walnuts and pour the batter in the already prepared loaf pan.
  • Bake for 20-25minutes or until a skewer inserted comes out clean.
