Ingredients

  • 1.5 cups - brown, Rice flour
  • 1/2 cup - Almond powder
  • 1/2 cup - all-purpose flour
  • 1 cup - silken Tofu
  • 3/4 cup - Sugar
  • 1 tsp - baking powder
  • 1/2 tsp - baking soda
  • 1/4 cup - dark chocolate powder
  • 1/2 cup - dry fruits: raisins, dates, Apricots and Cranberries
  • 2 tbsp - Canola Oil
  • How to Make Vegan Dry Fruits and Chocolate Cookies:

    1. Preheat the oven to 350 degree F and line a baking sheet over a baking tray
    2. Grind the sugar to a fine powder, add the silken tofu and oil to the powdered sugar and mix to form a paste. Transfer this paste into a bowl, meanwhile mix the brown rice flour, almond powder, all-purpose flour, baking powder, baking soda, chocolate powder, dry fruits in an another bowl and add gradually the dry ingredients to the sugar-tofu paste, turn everything as a soft and slightly sticky dough with a wooden spatula, don't over mix
    3. Shape small balls of cookies dough and arrange them over the lined baking sheet
    4. Before baking, just press the uncooked cookies with a fork and bake them in middle rack for 20-25minutes
