Ingredients

  • 1/2 cup - almonds, ground
  • 1/2 cup - parboiled brown rice, soaked
  • 1 cup - water
  • 1/2 cup - grated coconut palm sugar
  • A few - walnuts, chopped
  • A few raisins
  • 1/8 tsp - cardamom powder
  • A few - strands of saffron

How to Make Vegan kheer- kheer for diabetics

  • Wash and pressure cook the soaked parboiled rice with 1.5 cups water for 3 whistles. Ratio is 1 rice: 3 water
  • Let the pressure go off, remove the lid and just mash it a bit.
  • Grind the almonds with 1 cup of water to smooth milk
  • Pour it in the rice and continue to cook for 5 mins. Keep stirring
  • Add the cardamom powder
  • Crush the saffron strands and add to the rice
  • Add grated palm sugar and let cook for another 5 to 7 mins, keep stirring, take care not to burn the kheer.
  • Heat almond oil in a pan, fry the walnuts and raisins and garnish.
