  • 1.5 cups - all-purpose flour
  • 1/2 cup - cornmeal
  • 1/2 cup - silken Tofu
  • 1/2 cup - hot water
  • 4 - kiwi, peeled and chopped
  • 1 cup - Sugar
  • 1 tsp - baking powder
  • 1/2 tsp - baking soda
  • 1/2 cup - Sunflower oil
  • 1 tsp - vanilla extract
  • How to Make Vegan Kiwi and Cornmeal Muffins:

    1. Preheat the oven to 350 degree F
    2. Sieve all-purpose flour along with baking powder and baking soda.
    3. Now add the cornmeal to the sieved flour, keep aside
    4. Whisk together oil, sugar, vanilla extract thoroughly
    5. Make a puree with kiwi and silken tofu, add this puree to the sugar-oil mixture and beat thoroughly
    6. Finally add the flour-cornmeal mixture and hot water, mix everything well with a spatula, don't over mix the muffin batter
    7. Pour the muffin batter to the silicon muffin mould, bake for 15-20 mins until a skewer inserted comes out clean
