Ingredients

  • 25 - mint leaves, chopped finely
  • 1 cup - brown rice flour
  • 3 tbsp - all-purpose flour
  • 1/2 cup - rolled oats
  • 1 tsp - flax seed powder + 3 tsp water
  • 3 tbsp - olive oil
  • 1 tbsp - black sesame seeds
  • 1/2 tsp - baking soda
  • 1 tsp - baking powder
  • Salt

How to Make Vegan Minty Oats and Rice Crackers

  • Preheat the oven to 350 degree F
  • Mix the flax seed powder with water to a paste, add chopped mint leaves, brown rice flour, all-purpose flour, rolled oats, black sesame seeds, baking soda, baking powder and salt in a large bowl.
  • Add the flax seed paste and olive oil and mix the dry ingredients to a crumble like texture.
  • Now add water and mix to a soft but stiff dough
  • Roll the dough with rolling pin, using the cookie cutter, cut the dough into desired shapes.
  • Arrange shaped dough on the baking sheet and bake for 15-20 mins in middle rack
