Ingredients

  • 1 cup - whole Wheat pastry flour
  • 1/2 cup - Corn flour
  • 1.5 cups - Pineapple puree
  • 1/3 cup - oil
  • 1/2 cup - Sugar
  • 1/4 cup - pineapple, chopped as small bites
  • 1 tsp - vanilla extract
  • 1/4 tsp - salt
  • 1 tsp - baking powder
  • 1/2 tsp - baking soda

How to Make Vegan Pineapple Muffins

  • Preheat the oven to 350 degree F
  • Sift the flours, baking powder, baking soda and salt together and keep aside
  • In another bowl beat together the pineapple puree, oil, sugar and vanilla extract.
  • Now gradually add the dry ingredients to the wet ingredients.
  • Add pineapple pieces and mix everything with a spatula - don't over mix.
  • Pour batter to the greased muffin tin and bake for 20-25 mins in middle rack of the oven
