Ingredients

  • 1 cup - whole Wheat pastry flour
  • 1/2 cup - Corn flour
  • 1.5 cups - Pineapple puree
  • 1/3 cup - oil
  • 1/2 cup - Sugar
  • 1/4 cup - pineapple, chopped as small bites
  • 1 tsp - vanilla extract
  • 1/4 tsp - salt
  • 1 tsp - baking powder
  • 1/2 tsp - baking soda
  • How to Make Vegan Pineapple Muffins:

    1. Preheat the oven to 350 degree F
    2. Sift the flours, baking powder, baking soda and salt together and keep aside
    3. In another bowl beat together the pineapple puree, oil, sugar and vanilla extract.
    4. Now gradually add the dry ingredients to the wet ingredients.
    5. Add pineapple pieces and mix everything with a spatula - don't over mix.
    6. Pour batter to the greased muffin tin and bake for 20-25 mins in middle rack of the oven
