Ingredients

  • 2 cup - all-purpose flour
  • 1 cup - Pumpkin puree
  • 3/4 cup - Sugar
  • 1 tsp - baking powder
  • 1/2 tsp - baking soda
  • 1/2 tsp - Cinnamon powder
  • 1/2 tsp - Nutmeg powder
  • 1 cup - Canola Oil
  • 1/2 cup - Walnut pieces
  • 2 tbsp - Flax seed meal
  • 4 tbsp - lukewarm water
  • How to Make Vegan Pumpkin Walnut Muffins:

    1. Whisk sugar, oil, baking powder, baking soda together for a while.
    2. Make a thick paste with flax seed meal and lukewarm water and add them to the sugar-oil mixture
    3. Whisk everything for a few mins, add the pumpkin puree, cinnamon powder, nutmeg powder and beat
    4. Now add the flour and walnut pieces and stir everything continuously, until they turn into a sticky thickly batter
    5. Grease the muffin mould.
    6. Meanwhile preheat the oven at 350 degree F for 10 mins
    7. Pour the batter in the mould
    8. Arrange them in the middle rack and bake them for 20 -25 mins. Cool
    9. Chocolate glaze:
    10. Heat the few chips of dark chocolate in a microwave bowl for a few minutes, add a little water and glaze the muffins.
    11. Garnish with almonds and cashew nuts
