Ingredients

  • 2 cups - rye flour
  • 2 cups - all-purpose flour
  • 2.25 tsp - active Dry yeast
  • 1 cup - silken Tofu
  • 1/2 cup - lukewarm water
  • 1/2 cup - Olive oil
  • 2 tsp - Sugar
  • 1 tbsp - salt
  • 1/2 tsp - dry Red Chilli flakes
  • 1 tsp - dry herbs like Parsley and Thyme leaves
  • Sesame seeds

How to Make Vegan Rye Bread

  • Ferment yeast in lukewarm water with sugar and salt
  • Mix both flours, dry red chilli flakes and dry herbs in a bowl.
  • Slowly add the foamy yeast, pureed tofu and olive oil and knead to a soft dough.
  • Place the dough in a greased bowl, cover the bowl with a towel and keep in a warm place for an hour.
  • Punch down the dough and knead again
  • Make 16 small sized balls from the dough and arrange one by one in a greased mould and keep aside for an hour in a warm place
  • Preheat the oven to 350 degree F.
  • Brush the breads with olive oil, sprinkle sesame seeds on top and bake in middle rack for 20-25 mins until a golden brown crust forms over the bread.
  • turn off the oven and take off the mould and cool
  • Serve.
