Ingredients

  • 1/4 kg - Brinjal
  • 1/4 kg - lady finger
  • 4 - onion, big pieces
  • 4 - green chilli, big pieces
  • 150 g - besan powder
  • 5 g - Hing
  • 25 g - Rock Salt
  • 15 g - Dhania powder
  • 13 g - Jeera powder
  • 1 tsp - Mustard Seeds
  • Coriander leaves
  • Mint leaves
  • Fenugreek leaves
  • Sesame oil
  • How to Make Vegetable Burji:

    1. Cut all the vegetables and onions into medium pieces.
    2. Put them in hot boiling water for 30 secs (except onion) and remove.
    3. Soak the vegetables in besan paste and deep-fry in hot oil.
    4. Heat oil in a pan. Stir-fry onion and chilli, till onion becomes brown.
    5. Add all the fried vegetables, the other ingredients and spices to the pan and stir-fry continuously.
    6. Serve with thepla or uvla.
