Ingredients

  • 12 slices - bread of your choice
  • 4 tsp - butter
  • 4 lettuce leaves/cabbage leaves
  • 1 tsp - table mustard
  • 4 tsp - mint chutney
  • 2 potatoes boiled, peeled and sliced thickly
  • 2 tomatoes sliced
  • 1 onion sliced thinly
  • 1 tsp - pepper powder
  • Salt to taste

How to Make Vegetable Club Sandwiches

  • Toast the breast lightly and butter on one side of each.
  • Brush with mustard and mint chutney.
  • Place lettuce or cabbage leaves over 4 slices of toast, then cover with slices of potato and cucumber each. Sprinkle salt and cover with a slice of buttered toast.
  • Now place tomato slices on this and then the onion slices.
  • Sprinkle a little salt.
  • Cover with the remaining slices of toast buttered side down.
  • Secure each club sandwich with toothpicks.
  • Cut diagonally into half. Serve with tomato sauce, mustard and a few French fries.
  • Makes 4 club sandwiches.
  • Use vegetables of your choice.
