Ingredients

  • 4-5 Roma Tomatoes diced finely
  • 1 can Tomato Puree/Sauce
  • 2 Onions chopped finely
  • 2 cloves of Garlic (shredded)
  • 1 big piece of Ginger (shredded)
  • 2 Green Chillies (serrano-chopped)
  • Cloves, Cinnamon, Cumin seeds, Fennel seeds, Garam Masala.
  • Salt
  • 1 tbsp Sugar
  • 1/2 tsp Turmeric powder
  • 1 tsp Chilli powder
  • 2-3 cups of chopped Veggies- Potatoes, Cauliflower, Peas, Carrots, Broccoli (optional), Green/Red/Yellow Peppers.
  • 1/2 cup Whipping/Heavy Cream or Coconut Milk
  • 2-3 tbsp Oil (canola/corn)
  • Chopped Coriander

How to Make Vegetable Galore

  • In a deep pan, heat the oil. Add cloves, cinnamon, cumin seeds, fennel seeds, garam masala until sputtering.
  • Then add the garlic, ginger, green chillies and fry for a few seconds.
  • Add onions and fry until golden.
  • Now add the chopped tomatoes, cover the pan and let them cook for a couple of minutes.
  • Add the can of tomato puree, sugar, turmeric. Cover and let it cook for about 10 mins. When it is done, add some some water, the chopped vegetables and enough salt.
  • Cover and let the vegetables cook in the gravy (medium-low heat). This should take about 15 mins.
  • When the vegetables are done, add the 1/2 cup of heavy cream or coconut milk and mix. Cook for another minute.
  • Add some chopped cilantro for garnishing if its available.
  • Serve with pulao or parathas and some cool cucumber raitha.
