Ingredients

  • 3 cups - Mixed boiled vegetables (Beans, Peas, Carrot and Potatoes)
  • 2 - Onions
  • 3 - Spring onions (optional, if you don't have this you can add one more onion).
  • 2 - Tomatoes
  • 4 - Green chillies
  • 1 inch piece - Ginger
  • 1 tbsp - Coriander leaves
  • 1/2 cup- Tomato ketchup
  • 1 tsp - Chilly powder
  • 3 tbsp - Ghee
  • Salt to taste
  • How to Make Vegetable Jalfraize:

    1. Chop the onions into small pieces.
    2. Chop spring onions with leaves.
    3. Chop the tomatoes, ginger, green chillies, coriander all into small pieces and keep them separately.
    4. Heat oil / ghee in a kadai.
    5. Fry the onions till they turn golden brown in colour.
    6. Now add the tomatoes, green chillies, ginger, and coriander leaves and fry for 3 minutes.
    7. Then add ketchup, boiled vegetables, spring onions, chilli powder, salt and a little water and cook for 8 minutes.
    8. This goes well with chapattis.
