Ingredients

  • 2 cups - Toor Dal
  • 20 - Green beans
  • 3 - Carrot
  • 2 - Potato
  • 1 - Kohlrabi
  • 1 cup - Green peas and Lima beans
  • 1/2 tsp - Tamarind paste
  • Salt
  • For Masala:
  • 4 tsps - Urad Dal
  • 1 tsp - Channa Dal
  • 3 tsp - Dhania
  • 1.5 tsps - Pepper Corns
  • 1 tsp - Jeera
  • 3 - Red Chillies
  • 2 inch - Cinnamon
  • 4 - Cloves
  • For seasoning:
  • 1/2 cup - Peanuts and cashews
  • 1/2 tsp - mustard
  • Hing
  • Curry leaves
  • How to Make Vegetable Kootu:

    1. Fry all the ingredients for the masala with 1/4 tsp oil until it's golden brown.
    2. Then put all the above with 1/2 cup coconut in a mixer and grind it to smooth paste, adding little water.
    3. Cut beans into 2 pieces. Dice other vegetables into medium cubes.
    4. Boil them in a vessel separately until they are tender.
    5. Cook tuvar dal with 3 cups of water in a pressure cooker until 2 whistles.
    6. Drain vegetables. Mix dal and vegetables in a big vessel.
    7. Add ground masala, salt and tamarind paste.
    8. Add water to required consistency and bring to boil.
    9. Before taking it off the stove, add seasoning.
    10. Serve with rice or chapattis.
