How to Make Vegetable Kootu

  • Fry all the ingredients for the masala with 1/4 tsp oil until it's golden brown.
  • Then put all the above with 1/2 cup coconut in a mixer and grind it to smooth paste, adding little water.
  • Cut beans into 2 pieces. Dice other vegetables into medium cubes.
  • Boil them in a vessel separately until they are tender.
  • Cook tuvar dal with 3 cups of water in a pressure cooker until 2 whistles.
  • Drain vegetables. Mix dal and vegetables in a big vessel.
  • Add ground masala, salt and tamarind paste.
  • Add water to required consistency and bring to boil.
  • Before taking it off the stove, add seasoning.
  • Serve with rice or chapattis.
