Ingredients

  • Basmati Rice - 2 cups
  • Tomato - 1
  • Onion - 2
  • Green chilly - 6
  • Pudina - 1/2 bunch
  • Ginger paste - 1/2 tbsp
  • Garlic paste - 1/2 tbsp
  • Grated Coconut - 1 tbsp
  • Chilly powder - 1 tsp
  • Dhaniya powder - 1tsp
  • Turmeric powder - 1/2 tsp
  • Garam Masala powder - 1/2 tsp
  • Spices - 4 each
  • Water - 3 cups
  • Oil - 1/2 cup
  • Salt to taste
  • How to Make Vegetable kuska:

    1. Soak rice for 15-30 minutes.
    2. Grind together coconut, all powders, ginger-garlic paste into a smooth paste.
    3. In a kadai, heat oil.
    4. Add spices, chopped onion and fry till golden brown.
    5. Add chopped tomatoes and cook till soft.
    6. Add grounded masala and cook till the oil separates.
    7. Add rice, pudina, salt and water.
    8. Pressure cook for 1 whistle, not more.
    9. Serve hot with raitha and pappadam.
