Ingredients

  • Basmati rice - 2 cups
  • Tomato - 1
  • Onion - 2
  • Green chilly - 6
  • Pudina - 1/2 bunch
  • Ginger paste - 1/2 tbsp
  • Garlic paste - 1/2 tbsp
  • Grated coconut - 1 tbsp
  • Chilly powder - 1 tsp
  • Dhaniya powder - 1tsp
  • Turmeric powder - 1/2 tsp
  • Garam masala powder - 1/2 tsp
  • Spices - 4 each
  • Water - 3 cups
  • Oil - 1/2 cup
  • Salt to taste

How to Make Vegetable kuska

  • Soak rice for 15-30 minutes.
  • Grind together coconut, all powders, ginger-garlic paste into a smooth paste.
  • In a kadai, heat oil.
  • Add spices, chopped onion and fry till golden brown.
  • Add chopped tomatoes and cook till soft.
  • Add grounded masala and cook till the oil separates.
  • Add rice, pudina, salt and water.
  • Pressure cook for 1 whistle, not more.
  • Serve hot with raitha and pappadam.
