Ingredients

  • 2 - large potatoes (peeled and mashed)
  • 2 - medium carrots (peeled and cut into small pieces)
  • 250 g - runner beans (cut finely)
  • 100 g - peas
  • 1 cup - cauliflower florets
  • 2 tbsp - Bengal gram flour
  • 1 tsp - cumin powder
  • 1 tsp - finely chopped ginger
  • 1 tsp - chilli powder
  • 1/2 tsp - garam masala
  • Salt to taste
  • 1 piece - cinnamon
  • 2 - green chillies (minced finely)
  • 2 tbsp - chopped mint leaves
  • 3 - medium onions (chopped)
  • 3 - tomatoes (chopped)
  • Oil for deep frying

How to Make Vegetable (Mixed) Kofta Curry

  • Blanch the carrots, beans, peas and cauliflower in hot water for about 5 mins.
  • Drain and cool.
  • Add it to the boiled and mashed potatoes. Mix together with the Bengal gram flour, 1/4 tsp garam masala powder, green chillies, chopped mint and salt to taste.
  • Make small balls with this mixture and deep fry in hot oil till brown.
  • Keep aside.
  • Heat 2 tbsp oil in a pan and saute the onions, ginger and cinnamon till golden brown.
  • Now add the chopped tomatoes, chilli powder, cumin powder, turmeric powder, garam masala powder and fry till the oil separates from the mixture.
  • Add a little water and bring to boil.
  • Reduce heat and drop in the vegetable koftas gently.
  • Simmer till the gravy is sufficiently thick.
