Ingredients

  • 2 - large Potatoes (peeled and mashed)
  • 2 - medium Carrots (peeled and cut into small pieces)
  • 250 g - runner beans (cut finely)
  • 100 g - peas
  • 1 cup - Cauliflower florets
  • 2 tbsp - Bengal Gram flour
  • 1 tsp - cumin powder
  • 1 tsp - finely chopped Ginger
  • 1 tsp - chilli powder
  • 1/2 tsp - Garam Masala
  • Salt to taste
  • 1 piece - Cinnamon
  • 2 - Green chillies (minced finely)
  • 2 tbsp - chopped Mint leaves
  • 3 - medium Onions (chopped)
  • 3 - Tomatoes (chopped)
  • Oil for deep frying
  • How to Make Vegetable (Mixed) Kofta Curry:

    1. Blanch the carrots, beans, peas and cauliflower in hot water for about 5 mins.
    2. Drain and cool.
    3. Add it to the boiled and mashed potatoes. Mix together with the Bengal gram flour, 1/4 tsp garam masala powder, green chillies, chopped mint and salt to taste.
    4. Make small balls with this mixture and deep fry in hot oil till brown.
    5. Keep aside.
    6. Heat 2 tbsp oil in a pan and saute the onions, ginger and cinnamon till golden brown.
    7. Now add the chopped tomatoes, chilli powder, cumin powder, turmeric powder, garam masala powder and fry till the oil separates from the mixture.
    8. Add a little water and bring to boil.
    9. Reduce heat and drop in the vegetable koftas gently.
    10. Simmer till the gravy is sufficiently thick.
