Ingredients

  • 1 cup - basmati Rice
  • 1/2 cup - onion, sliced
  • 1/2 tsp - garlic, minced
  • 1/2 tsp - ginger, minced
  • 2 - green chillies, chopped
  • 1 tbsp - mint, chopped
  • 1 tbsp - coriander leaves, chopped
  • 2 Cloves
  • 1 piece Cinnamon
  • 2 Cardamom
  • 1/4 tsp - pepper
  • a pinch - shah Jeera
  • little Mace
  • 2 tbsp - oil or ghee1/2 cup - carrot, sliced
  • 1/2 cup - cauliflower, cut into small pieces
  • 1/2 cup - green peas, partially cooked
  • salt to taste

How to Make Vegetable Pulao (Microwave)

  • Wash the rice well and drain completely. Soak in 1 cup of water (minimum 15 mins, preferably 1 hour.)
  • Crush all the dry spices slightly. Mix these with onion, ginger, garlic and green chillies and place in a microwave proof bowl.
  • Add oil or ghee. Cook on full power for 6 mins, stirring twice in between,
  • Add mint and coriander. Add rice with the soaking water, vegetables, salt and 1 cup boiling hot water.
  • Cook covered on full power for 10 mins. Allow to stand for 5 mins. Stir gently with a fork and serve hot.
