How to Make Vegetable stew with fried eggs

  • Peel the potatoes, onions, marrow and tomatoes. Remove the seeds from the capsicums and slice all the vegetables thinly.
  • Melt the ghee in a frying pan. Add the oil, vegetables, garlic, salt and pepper.
  • Mix well. Cover and cook for 15 mins. Remove the lid and cook for another 30 mins. Add water if needed.
  • Pour this stew in a serving bowl and top with the fried eggs. Serve with boiled rice.
