Ingredients

  • 1 - carrot, finely chopped
  • 10 - French beans, chopped
  • 1 - small potato, peeled and chopped
  • 1 - small onion, chopped
  • 4 inch piece - bottle gourd, peeled, chopped
  • Salt to taste

How to Make Vegetable Stock

  • Put 2.5 litres water to boil in a deep vessel.
  • Add all vegetables and bring to boil.
  • Simmer, covered, on low heat for approximately 20 minutes till vegetables are very soft.
  • Take off fire and sieve through a non-metallic mesh.
  • Save this liquid to form vegetable stock for other soups.
  • Drained vegetables can be used for any other recipe.
  • Add salt.
  • Makes 2 litres approximately.
