Ingredients

  • 4 to 6 - big Potatoes
  • 250 g - boiled, mixed vegetables (carrot, capsicum, beans, peas, etc)
  • 1 tbsp - besan
  • salt as per taste
  • oil for frying
  • 1/4 tsp - Turmeric powder
  • 1/2 tsp - Red Chilli powder
  • 1 tsp - coriander powder
  • How to Make Vegetable stuffed potatoes:

    1. Peel the potatoes and cut it lengthwise.
    2. Scoop out the potato and make a boat like shape.
    3. Heat 1 tsp oil in the pan, add the boiled vegetables, salt and spices. Keep aside.
    4. Make a thin paste of besan flour.
    5. Stuff the potatoes with the vegetables, dip in the besan flour, and deep-fry.
