Ingredients

  • 2 cups long grain rice, washed and soaked in salted water for 30 minutes
  • 1 carrot, peeled and chopped
  • 10 French beans, peeled and chopped
  • 1/4 cup shelled peas
  • 1 potato, peeled and chopped
  • 1 tomato, chopped
  • 2 tomatoes, sliced thinly
  • 1 capsicum, sliced thinly
  • 1 onion, sliced thinly
  • 4 pimientos, finely chopped
  • 1 tsp crushed Garlic
  • 1 tsp white Vinegar
  • 3 pinches Saffron dissolved in 3 tbsp warm Milk
  • 3 tbsp Olive oil
  • 1/2 cup cheese, grated
  • Salt to taste

How to Make Vegetarian Paella

  • Boil peas, potato, carrot and beans in water. Drain and keep aside.
  • Boil rice in plenty of salted water till almost done.
  • Grain should be a little hard to press out.
  • Drain out excess water.
  • Cover and keep for 2 minutes.
  • Empty out in large plate.
  • Sprinkle saffron in milk over it and mix well.
  • Add boiled vegetables, chopped tomatoes, chopped pimientos and garlic.
  • Mix well without breaking rice grains.
  • Heat oil in a small pan.
  • Add chopped onion and capsicum and stir fry till onion is pinkish.
  • Add tomato slices, salt and vinegar and stir.
  • Pour over rice and spread evenly.
  • Sprinkle cheese to cover vegetables on top.
  • Sprinkle 3 tbsp milk all over dish.
  • Bake in a preheated oven at 200 degrees C for 10 minutes.
