Ingredients

  • 2 cups long grain rice, washed and soaked in salted water for 30 minutes
  • 1 carrot, peeled and chopped
  • 10 French beans, peeled and chopped
  • 1/4 cup shelled peas
  • 1 potato, peeled and chopped
  • 1 tomato, chopped
  • 2 tomatoes, sliced thinly
  • 1 capsicum, sliced thinly
  • 1 onion, sliced thinly
  • 4 pimientos, finely chopped
  • 1 tsp crushed Garlic
  • 1 tsp white Vinegar
  • 3 pinches Saffron dissolved in 3 tbsp warm Milk
  • 3 tbsp Olive oil
  • 1/2 cup cheese, grated
  • Salt to taste
  • How to Make Vegetarian Paella:

    1. Boil peas, potato, carrot and beans in water. Drain and keep aside.
    2. Boil rice in plenty of salted water till almost done.
    3. Grain should be a little hard to press out.
    4. Drain out excess water.
    5. Cover and keep for 2 minutes.
    6. Empty out in large plate.
    7. Sprinkle saffron in milk over it and mix well.
    8. Add boiled vegetables, chopped tomatoes, chopped pimientos and garlic.
    9. Mix well without breaking rice grains.
    10. Heat oil in a small pan.
    11. Add chopped onion and capsicum and stir fry till onion is pinkish.
    12. Add tomato slices, salt and vinegar and stir.
    13. Pour over rice and spread evenly.
    14. Sprinkle cheese to cover vegetables on top.
    15. Sprinkle 3 tbsp milk all over dish.
    16. Bake in a preheated oven at 200 degrees C for 10 minutes.
