Ingredients

  • 3 cups Rice Flour
  • 1 can Coconut milk
  • 1 tsp Dry Yeast
  • 1 tbsp Sugar
  • 3 cups Water
  • Salt to taste

How to Make Vellayappam

  • Warm up 2 tbsp of water, add sugar and mix in the yeast.
  • In a bowl, mix together the flour and coconut milk and make it into a paste. Make sure there are no lumps.
  • Gradually, add water and make a thin batter (like the consistency of dosa batter).
  • Add the dissolved yeast and salt and mix thoroughly.
  • Allow the batter to ferment for 6-8 hours.
  • When the batter has risen, it's ready to use.
  • Heat a non-stick tawa.
  • Pour in 1 ladle of batter, lift the tawa and rotate it slowly once so that the batter spreads evenly.
  • Cover and let it cook in the steam for 1 minute.
  • Remove the appam using a spatula when done.
  • Serve hot with a spicy side dish (korma).
