Ingredients

  • 1/2 kg - Okra
  • 1 - onion, large, chopped
  • 1 tsp - ginger, Garlic paste
  • 2 - green chillies, slit opened
  • A few - Curry leaves
  • 1/2 tsp - Mustard Seeds
  • 1/4 tsp - Urad Dal
  • 1/2 tsp - Cumin seeds
  • Salt
  • Oil
  • To roast and grind:
  • 1 tbsp - Coriander seeds
  • 1 tsp - Mustard Seeds
  • 1 tsp - Poppy Seeds
  • 2 tbsp - desiccated Coconut
  • 4 - dry Red Chilli
  • How to Make Vendaikkai Sukka - Okra Sukka:

    1. Chop the okras into 1 inch pieces
    2. Heat a little oil and fry okras until half done and keep aside
    3. Meanwhile, roast and grind coriander seeds, poppy seeds, mustard seeds, desiccated coconut and dry red chillies to a fine powder and keep aside
    4. Heat enough oil, splutter the mustard seeds, urad dal, curry leaves, cumin seeds and add the chopped onions, ginger garlic paste and slit green chillies.
    5. Saute until the onions turn translucent
    6. Add the okra pieces, freshly grounded spice powder, salt and simmer the vegetables till fully done.
    7. Serve hot.
