Ingredients

  • 1 kg pack - MTR pre-roasted vermicelli
  • 5 - Green chillies
  • 1 big cup - chopped Onion
  • 1/2 cup - chopped Tomatoes
  • 5 tbsp - carrots, grated
  • 1/4 cup - capsicum, chopped
  • 1 cup - grated Coconut
  • 6 tbsp - chopped coriander
  • 2 tbsp - Curry leaves
  • Salt - to taste
  • 8 tbsp - oil
  • For seasoning: Turmeric powder, urad dal, Channa dal, mustard, Jeera and Hing
  • How to Make Vermicelli Delight:

    1. Heat oil in a kadai and add the seasoning.
    2. Let them splutter, then add the curry leaves and fry for a minute.
    3. Add the onion, fry for 2 mins. Then add the carrot, capsicum and let it cook for a couple of minutes.
    4. Add the tomatoes and fry them a little till they blend.
    5. Add enough water, salt and let it boil.
    6. Add the roasted vermicelli and toss well.
    7. Cover and cook on low heat.
    8. Let the vermicelli and vegetables cook on low heat.
    9. After it is done, stir in the coconut and garnish with chopped coriander.
