Ingredients

  • 200 g - Refined flour or Maida
  • 200 g - Butter
  • 100 g - Sugar
  • A pinch of salt
  • 2 - eggs beaten well
  • 1 tsp - baking powder
  • 3 - bananas, cut into long slices
  • 6 tsp - Lemon juice
  • 1 cup - fresh Cream whipped with 2 tsp - Sugar
  • 1/2 cup - desiccated Coconut
  • How to Make Viceroy's Banana Pudding:

    1. Beat the butter and sugar together till fluffy.
    2. Add the eggs and continue beating for a few minutes.
    3. Add in the flour, salt and baking powder and mix well.
    4. Pour the mixture in a greased baking dish.
    5. Arrange the banana slices evenly on top.
    6. Sprinkle lemon juice and desiccated coconut over the slices.
    7. Bake for 25 mins until brown on the top.
    8. Remove from the oven and when cold turn out on a serving dish.
    9. Decorate with whipped cream.
