  • For the rice:
  • 1 glass - white Rice
  • 1/2 glass - full-cream Coconut Milk
  • 1.5 glasses - water
  • 1/2 cup - desiccated Coconut
  • Salt and Sugar to taste
  • 1/2 tsp - Cardamom powder
  • 1/4 tsp - cumin powder
  • For the sauce/curry:
  • A handful of Jaggery
  • 1.5 glasses - Coconut Milk
  • 1 tsp - cumin powder
  • 1/2 tsp - Ginger powder
  • Salt to taste
  • How to Make Vishu Rice and Curry:

    1. Boil the rice ingredients together and simmer, covered, until all the water and milk is absorbed by the rice grains and the grains are cooked.
    2. Melt the jaggery in a non-stick pot and add the coconut milk to it. Bring in to a boil and add the remaining ingredients.
    3. Simmer for a few minutes.
    4. Pour the curry/sauce over the rice and serve warm with some steamed banana or any South Indian side dish.
