  • 4 cups - watermelon, cubed
  • 2 cups - fresh lychees, peeled
  • 1/2 cup - Sugar
  • 1/3 cup - water
  • 2 cm piece - Ginger
  • 3 tbsp - Almonds
  • Vanilla ice Cream to serve

How to Make Watermelon And Lychee Fruit Salad

  • Mix sugar with water. Peel and cut ginger into thin strips and add to the sugar.
  • Heat the mixture and stir till the sugar dissolves.
  • Simmer without stirring for 3 - 4 minutes.
  • Remove from heat and cool the syrup.
  • Soak almonds in hot water, peel and shred thinly.
  • Cut each lychee into half and discard the seeds.
  • Mix them with watermelon cubes.
  • Pour the cooled sugar syrup on the fruits, toss well and chill in refrigerator for at least an hour.
  • To serve, place some fruit mixture with syrup in individual bowls.
  • Sprinkle with almonds and top with a scoop of vanilla ice cream.
