  • 2 cups - flour
  • 4 oz or 2 tbsp - butter
  • 3/4 cup - sugar
  • 1/2 cup - raisins
  • 1/4 cup - yogurt or 2 eggs
  • Milk if needed
  • 1/4 tsp - cinnamon powder
  • 1/4 tsp - nutmeg powder
  • 1/2 tsp - baking powder
  • Currants - 1/2 to 1 cup

How to Make Welsh Cake

  • Mix butter and flour well.
  • Add sugar, currants, cinnamon powder, nutmeg powder and baking powder.
  • Add yogurt and milk to make a soft dough.
  • Roll out on a floured surface, to a thickness of 1/8 inch.
  • Cut into rounds using cookie cutter.
  • Set electric frying pan to 350 degrees or if using a stovetop frying pan cook over medium.
  • Melt some butter and spread over the surface of the pan.
  • Place the cookie rounds on the pan.
  • Cook until the top sides start to dry out.
  • Flip the cookies and continue to cook until light golden.
  • Place the cookies on the cooling rack and sprinkle white sugar or fruit sugar over them.
  • Serve hot or cold.
