Ingredients

  • 2 cups - whole wheat flour
  • 1/2 tsp - baking soda
  • 1 tsp - baking powder
  • 1 tsp - cinnamon powder
  • 1/4 tsp - ginger powder
  • 1/4 tsp - cloves powder
  • 1/4 tsp - nutmeg powder
  • 1/2 tsp - salt
  • 1/2 cup - butter, at room temperature
  • 1 cup - sugar
  • 2 - large eggs
  • 3/4 cup - pumpkin puree
  • 1 tsp - vanilla extract
  • 1 cup - finely chopped dark chocolate

How to Make Whole Wheat, Pumpkin and Chocolate Muffins

  • Preheat the oven to 350 F.
  • Line the muffin cups.
  • Sift flour, baking soda, baking powder, spice powders and salt and keep aside.
  • In another bowl, beat the butter and sugar together until fluffy.
  • Add the eggs one at a time and beat well.
  • Beat in the vanilla extract and pumpkin puree.
  • Fold in the chopped chocolate gently; do not over mix.
  • Fill the muffin cups with this batter and bake on the middle rack for 20 minutes, until a skewer inserted comes out clean.
