Ingredients

  • 2 cups - whole Wheat flour
  • 1/2 tsp - baking soda
  • 1 tsp - baking powder
  • 1 tsp - Cinnamon powder
  • 1/4 tsp - Ginger powder
  • 1/4 tsp - Cloves powder
  • 1/4 tsp - Nutmeg powder
  • 1/2 tsp - salt
  • 1/2 cup - butter, at room temperature
  • 1 cup - Sugar
  • 2 - large eggs
  • 3/4 cup - Pumpkin puree
  • 1 tsp - vanilla extract
  • 1 cup - finely chopped dark chocolate
  • How to Make Whole Wheat, Pumpkin and Chocolate Muffins:

    1. Preheat the oven to 350 F.
    2. Line the muffin cups.
    3. Sift flour, baking soda, baking powder, spice powders and salt and keep aside.
    4. In another bowl, beat the butter and sugar together until fluffy.
    5. Add the eggs one at a time and beat well.
    6. Beat in the vanilla extract and pumpkin puree.
    7. Fold in the chopped chocolate gently; do not over mix.
    8. Fill the muffin cups with this batter and bake on the middle rack for 20 minutes, until a skewer inserted comes out clean.
