Ingredients

  • 2 - large potatoes diced into medium-sized cubes
  • 2 - large onions
  • 3 tbsp - besan
  • Turmeric powder - 1/2 tsp
  • 1/2 inch piece - ginger chopped fine
  • Green chillies - 4 slit into quarters
  • Curry leaves (optional)
  • Salt to taste
  • Seasoning:
  • 3 tsp - cooking oil
  • 1 tbsp - urad dal

How to Make Wholesome Aloo-Pyaaz

  • Add enough water to the besan to make a smooth paste.
  • Add 2 pinches of turmeric and set aside.
  • Make seasoning with oil and urad dal in a pan.
  • Add ginger, chillies and curry leaves and toss for a minute.
  • Add the potato and onion pieces and add salt.
  • Now add minimum water to cook.
  • Cover with a lid and let simmer till 'almost' done.
  • At this point add the besan paste. Mix gently. Besan should form a gravy like consistency in the pan.
  • If required add more water or besan paste to get the desired consistency. Sit gently for a while and then serve.
