Ingredients

  • 4 - large eggs
  • 600 ml - milk
  • 4 oz - fresh breadcrumbs
  • 1 tbsp - chopped parsley
  • Some chopped thyme
  • 2 tbsps - chopped chives or scallions
  • Salt
  • Pepper
  • 2 tbsps - butter

How to Make Wicklow Pancakes

  • Preheat the oven to 400 degrees F.
  • Beat the eggs lightly, then add the milk, breadcrumbs, herbs and seasoning and mix well.
  • Heat 1 tbsp of the butter in a pan until it starts foaming, then pour in the mixture
  • Cook over a low flame until it is brown underneath and just set on top.
  • Put it in the oven to finish cooking - around 20 minutes.
  • Serve cut into wedges with a knob of butter on each piece.
