The soft pulp is blended with fresh ingredients like sultanas, red chillies, ginger-garlic and vinegar. It is then boiled with the sugary syrup for thick-consistent chutney.
This tangy chutney is eaten at large in North India during significant fasting occasions.

How to Make Woodapple (Bael) Chutney

  • Break shell of woodapple and scoop out the inside with a spoon and weigh it. Squeeze the fruit well in vinegar, using about half the vinegar, and strain it through a coarse cloth.
  • Wash sultanas and remove stalks. Grind chillies, garlic and ginger with vinegar.
  • Make a syrup of sugar and remaining vinegar, add ground ingredients and salt and bring to a boil.
  • Add woodapple and boil till it has a good consistency for chutney. Let it cool and then mix in sultanas.
