Chutney Recipes from

Wood Apple is a fresh edible fruit, which helps in the treatment of many ailments, especially for boosting the immune system. Recognised as 'Bael' in hindi, the chutney prepared with this healthy fruit tastes heavenly with any Indian bread or rice.

The soft pulp is blended with fresh ingredients like sultanas, red chillies, ginger-garlic and vinegar. It is then boiled with the sugary syrup for thick-consistent chutney. This tangy chutney is eaten at large in North India during significant fasting occasions.

  • 450 gms. Woodapple
  • 450 gms. Sugar
  • 125 gms. sultanas
  • 15 gms. Red Chillies
  • 30 gms. Garlic
  • 20 gms. Ginger
  • 650 ml. Vinegar
  • Salt to taste
  • How to Make Woodapple (Bael) Chutney:

    1. Break shell of woodapple and scoop out the inside with a spoon and weigh it. Squeeze the fruit well in vinegar, using about half the vinegar, and strain it through a coarse cloth.
    2. Wash sultanas and remove stalks. Grind chillies, garlic and ginger with vinegar.
    3. Make a syrup of sugar and remaining vinegar, add ground ingredients and salt and bring to a boil.
    4. Add woodapple and boil till it has a good consistency for chutney. Let it cool and then mix in sultanas.
