Ingredients

  • 250 g - yard long beans, chopped
  • 1 cup - water
  • 1 - onion, chopped
  • 2 - green chillies, slit
  • 1/2 tsp - mustard seeds + urad dal
  • Few - curry leaves
  • Salt - to taste
  • Oil - as required
  • To Grind:
  • 3 tbsp - grated coconut
  • 3 - dry red chillies
  • 1 tbsp - cumin seeds

How to Make Yardlong Beans Thoran

  • In a microwave-safe bowl, place the chopped yard long beans, salt and 1 cup of water.
  • Cook in the microwave for 10 minutes on high.
  • Drain the excess water and keep the cooked beans aside.
  • Meanwhile, grind the coconut, dry red chillies and cumin seeds into a coarse paste.
  • Heat enough oil and add the mustard seeds, curry leaves and urad dal.
  • Allow them to splutter.
  • Add the onion and green chillies, saute until the onions turns translucent.
  • Now add the ground paste and cook it for few minutes.
  • Finally add the cooked yard long beans and salt, cook on a simmer.
  • Serve hot as side dish.
