Ingredients

  • 1/4 Kg - yellow Pumpkin
  • 1 tbsp - grated Coconut
  • 1 tsp - powdered Jaggery
  • 1 tsp - Mustard Seeds
  • 4 - dry chillies
  • A pinch of Asafoetida
  • Salt to taste
  • Oil to fry
  • How to Make Yellow Pumpkin Curry:

    1. Cut the yellow pumpkin into small pieces.
    2. Heat oil in a kadai. Add the mustard seeds and allow it to splutter.
    3. Add the dry chillies and asafoetida.
    4. Add the yellow pumpkin and cook for 3-4 minutes.
    5. Add the jaggery, coconut and salt.
    6. Serve hot with rice and sambar.
