Ingredients

  • Boiled Shrimps - 1/2 lbs
  • Potatoes boiled and chopped - 1
  • Bell pepper, chopped - 1/2
  • Yellow curry paste: 2 oz
  • 2 tbsp coriander powder
  • 2 tbsp cumin powder
  • 1 tbsp turmeric powder
  • Coconut milk 8 oz - 10 oz.
  • Basil leaves - 5
  • Water - 12 oz
  • Red Chilli Powder to taste
  • Salt to taste
  • Sugar 1 tbsp (optional)
  • Peanut powder - 2 tbsp

How to Make Yellow Shrimp Curry

  • Heat a pan on medium heat.
  • Open the can of coconut milk, scoop out some of the cream off the top and heat it with the curry paste until you see the oil starting to separate from the coconut milk.
  • Add the sugar, shrimp, water and rest of coconut milk and mix together.
  • When the shrimp is almost done, add salt, basil, peanut powder, red chilli powder, potato, bell pepper.
  • Let simmer for 10 min and then serve with plain rice.
