Ingredients

  • 10-12 - small brinjals
  • 1 - large onion, chopped
  • 1 - tomato, chopped
  • 1 tsp - tamarind paste
  • 1 tsp - mustard seeds
  • Few - curry leaves
  • Salt - to taste
  • 5 tbsp - sesame oil
  • Oil for roasting
  • To Grind:
  • 1 tbsp - roasted peanuts
  • 1 tsp - coriander seeds
  • 1 tsp - cumin seeds
  • 1 tsp - urad dal
  • 1 tsp - channa dal
  • 1 tsp - peppercorns
  • 2 tbsp - quinoa
  • 1 tsp - sesame seeds
  • 5 - dry red chillies
  • 2 tbsp - grated coconut
  • Salt - to taste

How to Make Yennai Kathirikkai-Stuffed Brinjal Curry

  • Heat few drops of oil.
  • Roast on a low heat the ingredients under the "To grind" list, except the roasted peanuts and salt.
  • Allow it to cool and then grind, together with roasted peanuts and salt.
  • Wash the brinjals and cut off the tops.
  • Make two perpendicular slits from the top on each brinjal.
  • Stuff them with the ground masala.
  • Heat the sesame oil in a pan.
  • Splutter mustard seeds and curry leaves.
  • Add the chopped onions, tomatoes and salt, and cook until well cooked.
  • Now add the stuffed brinjals and tamarind paste.
  • Cook well on simmer with lid closed.
  • Serve hot with rice or rotis.
