Ingredients

  • 10-12 - small Brinjals
  • 1 - large onion, chopped
  • 1 - tomato, chopped
  • 1 tsp - Tamarind paste
  • 1 tsp - Mustard Seeds
  • Few - Curry leaves
  • Salt - to taste
  • 5 tbsp - sesame oil
  • Oil for roasting
  • To Grind:
  • 1 tbsp - roasted Peanuts
  • 1 tsp - Coriander seeds
  • 1 tsp - Cumin seeds
  • 1 tsp - Urad Dal
  • 1 tsp - Channa dal
  • 1 tsp - peppercorns
  • 2 tbsp - Quinoa
  • 1 tsp - sesame seeds
  • 5 - dry Red Chillies
  • 2 tbsp - grated Coconut
  • Salt - to taste
  • How to Make Yennai Kathirikkai-Stuffed Brinjal Curry:

    1. Heat few drops of oil.
    2. Roast on a low heat the ingredients under the "To grind" list, except the roasted peanuts and salt.
    3. Allow it to cool and then grind, together with roasted peanuts and salt.
    4. Wash the brinjals and cut off the tops.
    5. Make two perpendicular slits from the top on each brinjal.
    6. Stuff them with the ground masala.
    7. Heat the sesame oil in a pan.
    8. Splutter mustard seeds and curry leaves.
    9. Add the chopped onions, tomatoes and salt, and cook until well cooked.
    10. Now add the stuffed brinjals and tamarind paste.
    11. Cook well on simmer with lid closed.
    12. Serve hot with rice or rotis.
