Ingredients

  • 1.25 cups - natural (plain) Yoghurt
  • 1.25 cups - single (light) Cream
  • 2 - Green chillies
  • 1 - onion, chopped
  • 1 small piece - Ginger root
  • 4 - Cloves Garlic
  • 2 tbsp - Ghee
  • 1 tsp - Cumin seeds
  • 1 tsp - Mustard Seeds
  • 2 to 3 - Curry leaves
  • 1/2 tsp - ground Turmeric
  • 2 - tsp Sugar
  • Salt
  • 1 tbsp - chopped fresh coriander
  • How to Make Yoghurt Soup:

    1. Puree the chilli, onion, ginger and garlic.
    2. Heat the ghee and fry the cumin, mustard seeds and curry leaves until the seeds start crackling.
    3. Fry turmeric and puree until brown.
    4. Add the yoghurt and cream and season to taste with sugar and salt.
    5. Whisk over gentle heat until the soup comes to a boil.
    6. Serve garnished with fresh coriander.
