Ingredients

  • 1 cup - fresh curds, hung to drain for 1 hour
  • 150 ml - soya Milk
  • 100 gms - seedless apricots, soaked in hot water overnight
  • 1 (7 gm) packet - china grass
  • 100 gms - Sugar
  • 3 to 4 drops - vanilla essence
  • 1 tbsp - Almonds and pistachios, slivered thinly

How to Make Yoghurt, Soyamilk, Apricot Dessert

  • Drain soaked apricots, blend it in a mixie till it gets crushed coarsely.
  • Put it in a heavy pan, sprinkle half sugar, heat till the sugar melts.
  • Simmer stirring gently, till excess moisture gets absorbed.
  • Keep it aside to cool, refrigerate till required.
  • Beat the curd and the remaining sugar in same mixie.
  • Then transfer it to a mixing bowl.
  • Melt china grass in 1/2 cup water, till it becomes transparent.
  • Strain and pour slowly in the beaten curd, mixing simultaneously. | |When fully mixed in, add essence, soya milk, apricots.
  • Beat it well with hand whisk, to lighten and fluff up.
  • Transfer it to freezer to softly set and chill.
  • Serve scooped into bowls, topped with nuts.
