Ingredients

  • Gravy:
  • 150 g -cream
  • 150 g -khoya or Paneer
  • 300 ml.- Milk
  • 100 g -cashew nuts
  • 6 tsp -white pepper powder
  • 5 tsp -sugar
  • 4 tsp - grated Ginger
  • 1/2 tsp -nutmeg powder
  • 1 tsp - Turmeric powder
  • 2 tsp -garlic crushed
  • 2 - Cinnamon
  • 12 -cloves
  • 12 -cardamoms
  • salt
  • 6 tbsp. -ghee
  • Kofta:
  • 100 g -khoya
  • 100 g- Paneer
  • 10 -medium Potatoes
  • 40 g- Cashew nuts
  • 40 g -raisins
  • 9-10- Green chillies chopped fine
  • 1 tsp - Ginger grated
  • 2 tsp- coriander chopped
  • 1 tsp - Cumin seeds
  • salt
  • Garnish:
  • 2 tbsp.- grated cheese or Paneer
  • 2 tbsp.- chopped coriander
  • How to Make Yummy Malai Kofta:

    1. Koftas:
    2. Boil the potatoes, peel and mash them well. Mix together all the ingredients except raisins and cashews.
    3. Take a ping-pong ball sized dough in hand. Flatten.
    4. Place 2-3 cashews and raisins in the centre and shape into a ball.
    5. Repeat for remaining dough. Keep aside.
    6. Gravy:
    7. Roast the spices together.
    8. Dry grind and keep aside. Wet grind all the other ingredients, except ghee, to a paste.
    9. Heat ghee in a skillet, add powdered spices and fry for 2-3 seconds.
    10. Add paste and fry further for few more minutes stirring well.
    11. Add 2 cups water and simmer on low for 15 minutes.
    12. Warm the koftas either in the oven or on the tava.
    13. Optional: You can deep fry the koftas also.
    14. To serve place warm koftas in a dish.
    15. Either pour boiling hot gravy on the koftas or pour and bake in hot oven of 5 minutes.
    16. Garnish with grated cheese and chopped coriander.
