Ingredients

  • 2 cups - cooked basmati Rice
  • 1 cup - Paneer cubes
  • 10 - Saffron strands
  • 1/4 cup - hot water
  • 1 tsp - shah Jeera
  • 1 - onion, chopped lengthwise
  • 3 - green chillies, slit
  • 1 tsp - Garam Masala powder
  • 1/2 tsp - Cumin seed powder
  • 1/2 tsp - pepper powder
  • Salt - to taste
  • 1/2 cup - Mint leaves, chopped
  • Oil - as required

How to Make Zafrani Paneer Pulao

  • Soak the saffron strands in hot water for half an hour.
  • Heat few drops of oil and fry the paneer pieces till golden brown; keep aside.
  • Separately, heat enough oil in a large pan, add the shah jeera and allow to crackle.
  • Add the chopped onions and stir until translucent.
  • Add the green chillies and chopped mint leaves.
  • Saute until the mint leaves wilt.
  • Add the garam masala powder, cumin seeds powder, pepper powder and the saffron water.
  • Toss so that the spices are well mixed.
  • Add the cooked basmati rice and mix gently.
  • Finally add the fried paneer and toss gently.
