Ingredients

  • 2 cups - cooked basmati Rice
  • 1 cup - Paneer cubes
  • 10 - Saffron strands
  • 1/4 cup - hot water
  • 1 tsp - shah Jeera
  • 1 - onion, chopped lengthwise
  • 3 - green chillies, slit
  • 1 tsp - Garam Masala powder
  • 1/2 tsp - Cumin seed powder
  • 1/2 tsp - pepper powder
  • Salt - to taste
  • 1/2 cup - Mint leaves, chopped
  • Oil - as required
  • How to Make Zafrani Paneer Pulao:

    1. Soak the saffron strands in hot water for half an hour.
    2. Heat few drops of oil and fry the paneer pieces till golden brown; keep aside.
    3. Separately, heat enough oil in a large pan, add the shah jeera and allow to crackle.
    4. Add the chopped onions and stir until translucent.
    5. Add the green chillies and chopped mint leaves.
    6. Saute until the mint leaves wilt.
    7. Add the garam masala powder, cumin seeds powder, pepper powder and the saffron water.
    8. Toss so that the spices are well mixed.
    9. Add the cooked basmati rice and mix gently.
    10. Finally add the fried paneer and toss gently.
