Ingredients

  • 2 cups - basmati Rice (or long grained Rice)
  • 1 cup - Sugar
  • 2 cups - water
  • 1/2 cup - Milk
  • 3 - Cloves
  • 2 inch - Cinnamon stick
  • 3 - green Cardamoms
  • 3 tsp - Ghee
  • 6 -- Pistachios
  • 6 - Almonds
  • Few - Saffron strands
  • Pinch - yellow food colour
  • How to Make Zarda -Kashmiri Sweet Rice:

    1. Wash and soak the rice for 15 minutes.
    2. In a pan, take sugar with enough water to cover it, and make a sugar syrup.
    3. In a heavy bottomed pan, heat the ghee, add the cinnamon, cloves and cardamom.
    4. Fry for few minutes.
    5. Add the drained rice and 2 cups of water.
    6. Once the water starts drying, add the sugar syrup, milk, yellow food colour and saffron strands.
    7. Cover and cook on simmer.
    8. Heat a teaspoon of ghee and roast half the nuts.
    9. Add it to the cooking rice.
    10. Once the rice is cooked, take off the heat.
