Ingredients

  • Rice - 2 cups precooked, any variety
  • Coriander leaves - 3/4 bunch
  • Onion - 1 medium , diced
  • raw Ginger - a small piece
  • Garlic - 4 or 5 plump pods
  • Green chillies - 2 medium sized ones
  • Garam Masala powder - 2 tsp
  • salt - to taste
  • peas - 1/2 cup
  • Bay Leaf - 1 or 2 (optional)
  • Oil - 4 tbsp
  • How to Make Zesty Coriander Rice:

    1. Grind together the onion pieces, ginger, garlic and green chillies with the coriander leaves in as little water as possible.
    2. In about 4 tbsp of oil, add the bay leaf and the ground paste. Fry till the rawness disappears and the oil starts to separate out.
    3. Add the peas and stir for a few minutes. Then add the garam masala powder and the salt. Stir and leave on fire on a small flame for a few minutes. Add the precooked rice and stir well.
