Ingredients

  • 1.5 cup - basmati Rice
  • 1 tsp - Orange zest, grated
  • 2 inch strip - Orange peel, chopped finely
  • 1 - medium sized onion, sliced finely
  • 1/2 - red pepper, sliced finely
  • 1 tbsp - peas
  • 1 - medium sized carrot, grated
  • 1/2 inch - ginger, grated
  • 1/2 inch - Cinnamon stick
  • 1/2 tsp - Cinnamon powder
  • 1/2 tbsp - almonds, chopped
  • 1 tbsp - Ghee or Butter
  • 1/2 Orange - juice
  • Salt - as required
  • How to Make Zesty Orange Pulav:

    1. Wash the orange well and wipe it, with a clean kitchen towel.
    2. Peel a thin strip of orange outer skin using a peeler and chop it finely.
    3. Finely grate, 1 teaspoon of orange zest and set it aside.
    4. Heat ghee in a pan. Add cinnamon stick, grated ginger, almonds and onion.
    5. keep it in medium to low heat and fry it gently, until the onion becomes transparent in colour.
    6. Now add the vegetables and stir for 2 to 3 minutes.
    7. Finally, add the zest and orange peel, stir well, immediately remove from fire.
    8. Wash the rice well. Add the vegetable mixture along with rice, juice of orange, salt to the rice cooker and cook, until the rice is cooked.
    9. Serve the rice with vegetable or chicken curries.
